Vegan Penne Pasta and Spicy Italian Sausage Recipe
2 cups uncooked penne pasta
1 teaspoon olive oil
1 onion chopped
1 red bell pepper chopped
4 Zen Butcher Spicy Italian Sausages, cut into 1-inch pieces
14oz stewed tomatoes
8oz can tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
1 cup vegan mozzarella cheese shreds optional
1. Cook the pasta according to package directions.
2. In a large skillet, add the oil, onions, and red bell pepper over medium heat
3. Add the sliced Zen Butcher Spicy Italian Sausage, followed by the tomatoes, tomato sauce and seasonings. Stir to combine and cook.
4. Drain pasta and pour into skillet, stirring until the pasta is coated.
5. Sprinkle the top of the pasta with vegan cheese shreds.
